Surrounded by the arid land of the Caatinga in eastern Brazil, is the oasis Planalto da Bahia. The higher altitude in this area creates a micröclimate that is cooler and wetter allowing for speciality coffee production. It is home to Fazenda Formosa, which is no funny farm. Here owner Edson Wanderlan Mascarenhas ensures only ripe cherries are hand-picked (no mean machine auto-picking here) then washed and de-pulped. Parchment is put into fermentation tanks for 24 hours. To dry the coffee the beans are moved away from the farm to the surrounding Caatinga which means white forest, this arid subtropical region nearly never rains, the air is dry and the temperature is always over 30 degrees celsius. All this might seem like overkill, but all this is to ensure the coffees stay clean.
